Need to know what WOOD FLOORING is durable, and less likely to scratch?

I'm remodeling my family, dining room, and kitchen. It will all be open and flowing from 1 room to the next. I want to do hardwood flooring in these 3 areas. What is the best choice of wood for these high traffic areas? No it's not going to be stone, or ceramic tile!
